Who would have thought I'd still be harvesting veggies from my garden in January? Not me. But apparently, parsnips taste better if you leave them in the ground until after the first frost. I was lazy and didn't get around to harvesting them then. I tried to harvest them sometime in December, but the ground was too frozen, and I couldn't get them out. Luckily, we had a thaw last week, and I was finally able to harvest the little suckers.
A little washing, chopping, and steaming, and we were enjoying fresh parsnips in the middle of winter.
Also, I learned there is a reason they tell you you should thin your crops. If you don't, you end up with one or two normal-sized parsnips and a bunch of puny ones. Lesson learned.
